Lazy but Tasty Dinner for One

I have been pretty lazy with my dinner ideas lately. I am snowed under with work to do for college and well planned meals are the last thing on my mind. I vow to improve. When Ian comes home at the weekends, we order take-away a lot! Both of us are feeling sluggish and really want to start eating better. When I eat 'bad' food, I try my best to at least eat healthier options. It doesn't always work out though.

One day last week, I was starving leaving college. I didn't have very much money in my purse so I went to Tesco to buy some cheap and tasty food. I picked up this Milano's (Pizza Express in UK, I think)  Margarita pizza for half price. Think it was €2.50. Bargin!!

I added my own healthy toppings just to give it more substance. I always have certain things in my fridge that I can add to pizzas, pastas, sandwiches and cous cous. So I covered the pizza with cooked, fresh spinach, jarred roasted peppers and artichokes and sliced cherry tomatoes.

I baked it in the oven for the recommended time, poured myself a glass of red wine and sat down and devoured my 580 (plus extra for added toppings and wine) calorie dinner. 

What other toppings would you recommend for me to try? I'm not a huge lover of meat.
