Something Fishy for Supper



I have been craving fish a lot lately. However, not being a fan of fleshy textures I find it hard to include it in my diet. That said, last night I decided to make some salmon fishcakes. I baked two darnes of salmon , steamed some potatoes, riced them and mixed the two together with some chillies and spring onions. Then shaped the mixture into small cakes, dusted with flour, dipped in egg and covered with breadcrumbs. The cakes went into the fridge to set for an hour.




Meanwhile I stir-fried some chillies, mangetouts, carrots, baby sweetcorn, broccoli, onion and spring onion and added cooked cold rice. I continued to cook the ingredients in sesame oil with ginger and garlic.




After heating a large frying pan I shallow fried the fishcakes until golden brown. I added a couple of slices of lemon and served the meal up to a very hungry man :)








If anyone has any suggestions for meals which include fish but not ones where you have to cut into the actual fish, I would love to hear them.
