Coffee Cake for Mum

My mum has been abstaining from her little afternoon treats lately, just to give herself a challenge. So to celebrate her return to the land of sugar, I baked her a small coffee loaf cake. It was an easy, fuss-free recipe.


All I used was 
175g Self Raising Flour
175g Butter
175g Caster Sugar
4 tbsp Instant Coffee mixed into 1 tbsp Boiling Water
3 Eggs


Firstly, I creamed the butter and sugar for 5-6 minutes. I took the lazy girl's way out and just used my free standing mixer. I usually use my hand held one just to give my love to it but I had other things to do so ....


I added the 3 eggs but just one at a time, with a little flour.


I doubled sieved the flour in order to create a lightness for the sponge and folded it into the mixture.


I also added the coffee liquid and gently folded that in too. I greased and lined a 2lb loaf tin and baked in a preheated oven of 180°C for approximately 55 mins.

When cooled, I sieved 125g Icing Sugar into a bowl, added 50g Butter and beat.


To complete the buttercream icing I added a mixture of 1 tbsp of instant coffee dissolved in 1 tsp of boiling water.

And hey presto - a tantalising coffee icing.


I finished off the cake with some leftover decorations I had from Easter. Mum was thrilled.
