Hummingbird Bakery Summer Fruit Cheesecake



We were home in Ireland recently, so I decided to have a root around in my book collection; which I have been missing. Flicking through the cake-batter covered pages of 'The Hummingbird Bakery Cookbook', I came across this easy recipe for Summer Fruit Cheesecake.





I took a trip to Tesco to stock up on the ingredients needed. You would not believe my delight while browsing the baking aisle. Imagine a shop where you can get pretty much everything you need to bake almost any recipe.I find this quite a challenge, here in Munich. I have finally mastered the different types of flour but I am struggling to find different sugars and food colouring. But sure hey that's another story for another time. On to the recipe in hand:




Good quality unsalted butter 




Butter melted
 



Digestive Biscuits


Crushed



Loose bottomed cake tin greased and lined




Butter and Biscuits mixed together




Pressed into tin



Cream cheese softened



Sugar, vanilla and egg added



Defrosted (or fresh) berries stirred in



Gently



Biscuit base covered with cheese and fruit goodness



Bottom of tin covered in tin foil to prevent water getting through




Placed in a Bain-Marie and hot oven



Removed from said hot oven and allowed to cool



Decorated with leftover berries



Admired by all.

Side Note: If you would like to know the actual measurements, they are quite clear in the first picture. I am just never sure just how much of somebody else hard work I can share with you
