Rich Chocolate Cake



For some reason I was craving a really chocolatey, homemade cake. It has been years since I baked one but I searched through recipes online and ended up with this guy. It was nice but was not exactly the chocolate hit I was after. I think I wanted something more fudgey that would be great heated up with a cup of Irish tea. Oh no, so that means I have to bake more?? Poor Ian and my tummy ; ) 


Preheat oven to 180 C

225g Plain Flour
2 Large Eggs
2 tsp Vanilla Extract
350g Caster Sugar
250ml Milk
125 ml Vegetable Oil
85g Cocoa Powder
2 tsp Baking Powder


200g Dark Chocolate (I used 70%)
200ml Double Cream





Mix dry ingredients together. I always double sieve.





Beat in eggs, oil, milk and vanilla extract.






Line two 20cm Round Cake Tins with baking/parchment paper



Nice and glossy






Bake for 30-35 mins





Melt chocolate in a saucepan with the cream on a gentle heat.




Laugh at your mother, who doesn't have a sweet tooth, waiting impatiently with a knife and fork











And serve!!
